Beef mince fruity curry

1 onion, finely chopped
1 tsp olive oil
2 red chillies, deseeded and finely chopped
1inch piece fresh ginger, grated
2 garlic cloves, grated
2 tbsp curry powder
675g beef mince
1 vegetable stock cube, mixed with 150 ml hot water
2 eating apples, peeled, cored and diced
handful of raisins
- In a large frying pan sweat the onion in the oil. When translucent, add the chillies, ginger and garlic cloves. Stir and add the curry powder.
- Tip in the mince and cook, stirring, until the meat is no longer pink. Pour in the vegetable stock and bring to the boil. Add the apples and raisins and simmer for 10 minutes until thickened. Season and serve with rice.
